Ingredients

  • 4 pcs Food-grade gelatin clear Liana

  1. Wash the knee and skin thoroughly and cover with water so that they remain submerged in water, possibly 2 cm above.
  2. Add onion, garlic, spices, bay leaves and let it cook. We do not salt. Cook on low heat for about 6 hours.
  3. Before the end, add salt, season with sweet red ground pepper and, if necessary, season with black ground pepper.
  4. Let the gelatin swell for 10 minutes in 200 ml of cold water. Mix the swollen gelatin with the hot custard and set aside immediately.
  5. Strain the liquid through a sieve, divide the meat into bowls and cover with the strained liquid pulp. We let it cool overnight. Served with vinegar, onion and homemade bread.

Bez paprckov huspeninu neurobite, potrebujete kolagen, co je v.paprckach, chvostoch a kozi Z kolena huspenina nebude, koleno sa dava len preto, aby tam bolo aj nejake maso, ale chyba v zaklad. Preto tam davate zelatinu, ktora do hispeniny nepatri, tym len kompenzujete zaklad, ktory tam chyba. Miesto mletej papriky a noveho korenia bu som radsej uvazoval na nejakom kusku udenom, napr. z udeneho kolena. Inak to bude len srnci cjbat, ktory rovno mozete ozdobit kapiou a pridat zemiakovy salat ako prilohu.
